Cornmeal, olive oil, cream cheese, green leaves, tomato and crispy bacon muffin

  • 220 gr of flour 0000
  • 145 gr of corn flour
  • 60 gr of sugar
  • 3 tablespoons of baking powder
  • 1 tsp of salt
  • 1 egg
  • 70 ml olive oil
  • 450 ml milk

For the topping:

  • 250 gr cream cheese
  • 150 gr bacon cooked slices

 

Sift the dry ingredients and combine them in a bowl with the liquids.
Preheat the oven to 190 degrees and bake for 20 minutes.
Unmold and let cool.
Make a cut at the top and place 1 teaspoon of cream cheese and a piece of crispy bacon on top.
Serve with a mattress of greens seasoned with olive oil.
