Hummus of green olives and olive oil with salt crout

For the Hummus:

  •  Process 300g of cooked and drained chickpeas with:
  • 50 gr of green olives
  • 50 gr of olive oil
  • 1 coriander bouquet
  •  ½ Brunoise Onion
  • Salt and pepper

Process:

  • 300 gr of cooked and drained chickpeas with:
  • 50 gr of green olives
  • 50 gr of olive oil
  • 1 coriander bouquet
  • ½ Brunoise Onion
  • Salt and pepper

Process until a smooth and homogeneous paste is formed.

Serve, smooth with a spoon, sprinkle with paprika and put olive oil on top.

 

For the dough

  • 400 gr of flour
  • 150 gr of water
  •  30 gr of olive oil

Knead until a smooth bun is formed

Stretch up to 0.5 mm and place on a plate, rub with olive and sprinkle with salt and herbs.
